Oolong (simplified Chinese: иТ; traditional Chinese: иж pinyin: wulong) is a traditional Chinese tea (Camellia sinensis) somewhere between green and black in oxidation. It ranges from 10% to 70% oxidation, it is among the most popular types of teas served in typical Chinese restaurants.

In Chinese tea culture, semi-oxidised oolong teas are collectively grouped as qmgcha (Chinese: пЦ; literally “clear tea”). Oolong has a taste more akin to green tea than to black tea: it does not have either the rosy, sweet aroma of black tea, or the stridently grassy vegetal notes that typify green tea. It is commonly brewed to be strong, with the bitterness leaving a sweet aftertaste. Several subvarieties of oolong, including those produced in the Wuyi Mountains of northern Fujlan and in the central mountains of Taiwan, are among the most famous Chinese teas.

Oolong tea leaves are processed in two different ways. Some teas are rolled into long curly leaves, while some are pressed into a ball-like form similar to gunpowder tea. The former method of processing is the older of the two.

The name oolong tea comes into the English language from the Chinese name (Chinese: иЩ35), which is pronounced as Oliong te in the Min Nan spoken variant. The Chinese name means “black dragon tea”.

Blooming tea, also called flowering or artisan tea, is an ornamental type of tea made by tying a small bundle of tea leaves and flowers together with cotton thread into a ball. When steeped in water the bundle unfurls in a process like that of a flower coming into bloom. Jasmine flowers are the most common but globe amaranth, chrysanthemum, lily, hibiscus and osmanthus are also used. They are generally steeped in a glass vessel so that the process can be viewed and are a speciality of the Yunnan province of China where they are always hand made by specialist artisans.

History of Blooming Tea

The history of blooming tea is a little obscure. Some sources say it is a relatively recent invention, around 10-15 years old, coincidentally around the same time that they were marketed to countries outside of China. Other sources claim it is at least several hundred years old and can be proved by sources in Chinese literature. It is certain that “display teas” have been around in China for a long time. The tea loving emperors of the Song dynasty (960-1279) were known to have “bundles of tea leaves tied up with flowers for the emperor’s entertainment”, although these were not drunk, being usually of inferior quality tea, and only used for visual entertainment. What seems likely is that this art form was adapted for Western markets using higher quality teas and sold in a transparent glass or pot for consumption.

Types of Blooming Tea

Blooming teas are generally given poetic names that describe the way they unfold and the flowers used. There are many different types and no particular famous ones, as they are all artistic and unique in their own way. Names like “seven angels” to refer to a string of seven jasmine flowers that rise up in a line and “amaranth bouquet” for a large amaranth flower in the middle of a spread of tea leaves are common types of names for blooming teas.

Preparation of Blooming Teas

Blooming teas are generally prepared in a transparent vessel to better watch the opening of the flower, although sometimes they may be served in a cup and viewed only from the top. They are generally refilled with hot water several times until the tea begins to lose taste. The presence of the flowers makes them quite sweet and very aromatic so they can tolerate being steeped for a long time without becoming bitter.

Tea blending refers to the process of mixing several different teas together to create a final product. The idea is to balance the flavours and health benefits of many types of tea together to create a rounded whole. Experienced tea drinkers may prefer to do this themselves using individual varieties but many blends are so successful that they have become mass produced and sold as separate teas. Blends are primarily made with different types of black tea although sometimes other teas such as Pu-erh from different regions are used. Tea also has the tendency to adopt the aroma and flavour from anything it is stored near. This is often a problem but it has also been exploited and used to make blends with perfumes, flavourings and essential oils, either to enhance the experience or hide sub-standard quality of the actual tea. Each blend has its own unique history and health benefits and should be described separately.

Types of Blended Tea

English Breakfast

English Breakfast tea is a mixture of several black teas to create a full bodied, robust and rich tea that is designed to go well with milk and sugar in a style traditionally associated with the hearty full English breakfast. There are many individual brands but most include Assam, Ceylon and Kenyan teas with occasionally Keemun in the more expensive blends. This is by far the most popular kind of tea drunk in Britain and when served in tea bags is sometimes referred to as “builders tea” due to its reputation as being the favourite drink of construction workers, and in fact all workers in all sections of British society. Irish and Scottish breakfast are variations on English breakfast but refer to the specific brands available in Ireland and Scotland. For many people in the British Isles, especially in Ireland and some sections of England, these blends are simply referred to as “tea” as their popularity is almost universal and sometimes the only kind of tea that people are familiar with.

Perhaps not surprisingly English Breakfast tea was not invented in England. Two stories about its origin are common. One states it was the invention of a Scottish purveyor who first begun to sell a “breakfast” tea in the mid 19th century. It quickly caught on in England and became a cultural tradition becoming known as English tea in other countries. The names merged became English Breakfast. A second source says its inventor was Richard Davies in 1843, who commenced a tea company in New York. He mixed together congou (a Chinese black tea) as a base, adding a pinch of flowery pekoe and a particular type of pouchong and called it English Breakfast tea. Being the cheapest of his blends it quickly became very popular and the ingredients were recorded and kept very uniform in quantity, with small amounts of each batch kept to compare against the new batches. Today this original recipe is no longer followed but the name is still used to refer to many blends that are rich, full bodied and designed to be drunk with milk in the traditional English style.

Russian Caravan

Russian Caravan is a blend of Oolong, Keemun and Lapsang Souchong. Its name derived from the 18th century camel caravans that carried tea from China, India and Ceylon to Europe via Russia. It would take at least half a year to make the difficult six thousand mile journey. While the sea route might be quicker it was thought that the tropical heat impaired the flavour of the tea while passage through the cold, dry climate of Mongolia and Siberia helped to improve it by removing the unpleasant taste of the firing process. This made the harsh northern journey worthwhile as the teas could sell for a much higher price. It has a distinctive smoky aroma caused by the Lapsang Souchong that was originally intended as a preservative.

Teas Blended with Scents, Flavourings and Oils

Earl Grey

This is a distinctive tea with the flavour and aroma of bergamot oil, a fragrant citrus fruit. It is named after the 2nd Earl Charles Grey, a British Prime Minister in the 1830s who oversaw the abolishment of slavery in the British Empire and was said to have received a gift of tea flavoured with bergamot. He then gave the recipe to Jacksons of Piccadilly, a tea house by royal appointment, who have been making this tea from the original recipe ever since. It is one of the most popular kinds of tea in the Western world. Traditionally it is a black tea but the name is often used to refer to any tea flavoured with bergamot. Several other varieties have also appeared such as Lady Grey, a blend developed by Twinings, which is flavoured with lemon and Seville orange as well as bergamot and with the addition of blue cornflowers for an even more pleasant aroma. Several other Earl Grey blends have adopted the use of blue cornflowers, often just called Earl Grey Blue Flower tea.

Jasmine Tea

Green or white tea with added jasmine blossoms has been drunk in China since the Song Dynasty in China (960-1279). As well as the flowery aroma it is also sweeter in flavour and generally regarded as less harsh for drinking. The jasmine flowers are picked early in the day when the petals are tightly closed and kept cool until nightfall when they begin to open. The tea is blended with the flowers and stored overnight. It takes four or more hours for the fragrance to be absorbed by the tea and this process may be repeated six or seven times. The tea must then be re-fired to prevent moisture absorbed from the flowers from spoiling the tea.

Masala Chai

A spiced tea from India, often just called chai in English speaking countries which is simply the Hindi word for tea. It has no fixed recipe and each household may have its own technique. It is generally made with black tea flavoured with cardamom. cinnamon, ginger, star anise, black pepper and cloves and boiled in a pan with a mixture of ¼ to ½ parts whole or condensed milk to water and sweetened with sugar, honey or jaggery to create a rich warming brew. A Kashmiri version called Kahwah is milder, made with green tea and more subtle flavourings such as almonds, cardamom, cinnamon, cloves and sometimes saffron. The health benefits of chai depend on the spices used but some of the masala spice mixtures are derived from Ayurvedic medical texts and selected especially for their medicinal properties. Many chai blends are available commercially but for the adventurous there is no better way to start experimenting with blending than to try and mix your own spices, either from your own knowledge or from a recipe guide, with some tea in a saucepan at home.

Preparation

Blended teas are generally prepared according to the type of tea they contain. Refer to the individual packaging for purchased blends, or the recipe you are using if attempting to blend your own.

Being a fully fermented type of tea black tea is made of Camellia sinensis plant along with oolong and green teas. Withering, rolling of the tea leaves and a lasting period of fermentation are the phases of producing loose black tea. Then the tea leaves are fired turning into black tea with a complex aroma and strong flavor. Our loose black teas contain about 20% of caffeine in a cup of coffee being a good tonic tea.

History of Black Tea

It is not known exactly where and when black tea was invented, however there are two theories explaining the discovery of black tea. The first, or the “Wuyi” theory, is important in Chinese black tea history, though it is more about the creation of oolong tea. Since the Song Dynasty in the Wuyi Mountains there had been made compressed tea cakes. The emperor of the Ming Dynasty demanded a change for loose tea production. Several attempts were made by the tea producers in this way, as a sign of fermentation the tea leaves turned red and the black tea was called red tea in China (however it should not be confused with rooibos red tea).

The second story is connected with Chinese Tong Mu village. For some time during the 16th century the production of green tea was stopped there by the army soldiers passing through the Tong Mu village. When the soldiers left the place, the piles of tea leaves, from which their beds were made, turned black. Tea production was resumed and these black tea leaves gave birth to this new type of tea.

America is not as well known for its tea traditions as the UK, China or India but tea has played an important role in American history and has developed some of its own unique traditions including the invention of tea bags, iced tea and sweet tea. Although coffee remains a more popular drink than tea and around 80% of the tea that is drunk in America is served iced, fine teas are enjoying a revival in recent decades. Their absence from traditional American culture is as significant as its presence in China because the availability of tea has been bound with American politics since the 18th century through to the 1970s.

Initially tea was required to be sold by the East India Company exclusively to London where it paid a duty before being exported to the American colonies. This created a number of opportunities for smuggling tax free tea to America. In an attempt to control this, and boost the fortunes of the East India company which was suffering financial difficulties, the British parliament passed the Tea Act of 1773. The Tea Act taxed the tea at its source, in India, and allowed it to be exported directly to America without landing in London first. This was meant to made tea cheaper for the Americans, encouraging sales to help the East India Company, while ensuring that Britain could still claim its taxes on all tea leaving India and curb the smuggling industry. But the colonists were not happy upon realizing that they were being made to pay a tax to an authority that was not elected by them and in response they rebelled. In three colonies they refused to accept the tea and prevented the importers from unloading their cargo, but in Boston they went one step further and refused to allow the tea to be sent back to Britain too. They threw the cargo into the harbour in an event that has become known as the Boston Tea Party which led Britain to impose the Coercive Acts on the colonies, a set of draconian laws that punished Americans indiscriminately for their part in the protest, regardless of their involvement, partly to reclaim payment for the destroyed cargo. It had the opposite effect, to create stronger anti-British sentiment amongst the colonies and ultimately triggered the American Revolution.

With independence from England and its Indian tea supplies, most American tea come from Indonesia, Sri Lanka, Kenya, Argentina, Malawi and America’s only home plantation in South Carolina. This caused US tea traditions to take on a different style to the rest of the world, in particular their preference for sweet iced tea. This development directly parallels the invention of refrigeration in the early half of the 19th century. Initially tea was made as punches and contained cold green tea with a considerable amount of liquor served at social gatherings and special occasions. Frequently they were given regional or patriotic names such as the Chatham Artillery Punch or Charleston’s St. Cecilia Punch after the musical society at whose annual ball it was served. These were particularly popular in South Carolina where tea was grown locally and temperatures were hot. As refrigerators became more commonplace in the mid-19th century iced tea became more of a daily drink and during the last half of the century we see a move from alcoholic green tea punch to sweetened iced black tea being prepared at home and appearing in domestic cookbooks. This sweetened iced tea is still the standard variety of tea that is served in southern states of America and often just referred to as just “tea”.

Iced tea finally became commercialised and spread throughout the country when, at the 1904 World Fair in St. Louis, Richard Blechynden, the Indian Tea Commissioner, was distributing free tea during a hot summer. He soon realised that people were shunning his stall for cooler drinks and so took his brewed Indian tea, put it in several large bottles and filtered it through iced pipes. The free iced tea was very much welcomed by fair goers and so after the fair Blechynden took his apparatus to Bloomingdale Brothers department store in New York where it continued to enjoy considerable popularity. Two decades later, during the prohibition era (1920-1933), Americans searched for alternatives to alcoholic beverages and iced tea became a natural choice, ensuring it a place in American cuisine.

Another significant invention from the United States is the tea bag. Invented in 1903 and appearing commercially by 1904, they were first successfully marketed by Thomas Sullivan, a New York tea importer, who sent samples in small silk sacks. He intended the tea to be removed from the sack but many of his customers did not realise this and dipped the bag in whole. When they later ordered tea from him and found it did not come in the small bags they complained and so he quickly got to work designing some gauze sacks that would do the same job. The ease of being able to control the exact time of steeping and remove the leaves with minimal effort has made them a staple part of American tea culture since.

In recent years there has been a revival of fine teas in America, mainly due to the lifting of China’s ban on exports to the USA in 1971. Since the 1920s Americans could not get Chinese tea and very little Indian tea was imported. The ones they did get were specifically blended for iced tea bags: always black and selected to be clear when cooled. This is because clear black iced teas were considered more attractive by consumers although there is no difference in quality of taste. With China’s ban lifted, people in the USA begun to experiment with green, white and red teas. American tea consumers have become increasingly interested in the origins of their tea and wanting to try teas from all parts of the globe. Many are now sold under the producing garden’s factory trademark and where this is not possible the district, state or elevation is named on the box or the proportion of each tea in the blend is listed. The drive to try as many different teas from as many sources as possible has replaced the urge to invest in complex preparation methods and simple steeping in hot water is generally favoured. To the American mindset money is better invested in trying many different teas in a simple, economic and time efficient way than in buying complex and expensive tea making equipments which are not universally agreed upon, even by experts, as the best way of making tea. Tea producers also agree that this is good for business as whatever sells more tea is good for the tea production industry in general.

American tea culture has been strongly influenced by its position in world politics as the revolution against England limited their sources and made them take on different customs.
